Saddle

Put it on a tamed horse, kangaroo, bear or behemoth, then right click the animal to ride it. F gets you off.

In the game

Five hides on an iron tree: a 3×2 grid of hides (leather or fur) with an iron ingot in the middle of the bottom row.

Ride your tamed animal: without a saddle no animal can be ridden.

A mount is earned twice: once when you tame it, once when you saddle it.

Tame a horse, a kangaroo, a bear or a behemoth.
Right click the tamed, grown-up animal with the saddle in hand: the saddle goes on.
Right click it with an empty hand to mount; F to dismount.

A saddle on a wild animal or on a baby is simply ignored. The Moon's giant bird takes its own sky saddle: see Pearlwing.
